Although there are many good books written on F&B operations, as a professor it was in my mind that there should be one book in the format of Question & Answer, so as to give on easy and clear knowledge of F&B subject to students during Exams and Interviews. Author does not claim that the answer given are in absolute standardize format. Teaching faculties may have their own views of writing answers. still Author has taken maximum effort to balance each answer to satisfy need of the particular question.
